Oh banana bread, how I love thee. Let me count the ways…
I love everything about banana bread. Naturally, it’s delicious so of course I enjoy partaking of it myself (with just a smidge of cream cheese icing… Heavenly!) I adore that this scrumptious concoction can be created from bananas I would not just peel and eat. You can totally use bananas that are past their prime or a little on the old side. Plus, banana bread makes a fantastic thoughtful little homemade gift! Just add a sweet lil tag (like this one from Fun Stampers Journey) and a bow and Voila! Instant gift sensation!
1/2 cup shortening
1 cup sugar
1 cup mashed bananas (approx. 3)
1/2 cup buttermilk
1/2 cup chopped walnuts
1/2 TSP salt
1 TSP baking soda
1 3/4 cups flour
Mix sugar and shortening together. Then add egg and bananas, then buttermilk. Stir in salt, baking soda, and flour. Gently fold in the nuts.
Grease 1 large bread pan or 4 small bread pans. Fill with batter and bake at 350 degrees for 45-60 minutes.
**Note: If you use small pans be sure to check the banana bread at 45 minutes.
