Taco Sweet Potato
Cook your ground beef or chicken as you normally would. Add taco seasoning for a little zip! I like to pick up a packet of low sodium seasoning from the grocery store, but there are lots of recipes on Pinterest if you want to make your own. While preparing your meat, pop your potato in the microwave or oven, whichever you prefer. Once your potato is ready, slice that spud open and add your meat. Top with pico de gallo and guacamole or your own fiesta of favorites. I personally prefer a colorful spread of sliced peppers on the side. Squeeze a wedge of lime over top to really give your dish that fresh from the cantina taste! This dish is so filling and gives you that feeling like youโre getting away with eating something bad! (Even if the kids are away for the weekend or whatever your situation, go ahead and cook up the whole pound of taco meat โ I always do! You can enjoy it on a taco sweet potato one night, and savor it on a salad the next!)
