Midweek Meal Made Easy

I’ve got a family meal made so easy that yes, you can prepare it and enjoy it even on a weeknight!
Enter – Zesty Italian Sandwiches
made with high-quality cuts of Kentucky Beef.
3lb Kentucky Beef chuck roast
1 envelope your favorite zesty Italian salad dressing mix
8oz pepperoncini pepper slices + splash of juice
14.5oz can beef broth
provolone cheese slices
1. Place chuck roast into the bottom of your crock pot (I believe mine is a 6qt). Sprinkle with salad dressing mix. Add pepperoncini peppers plus a splash of juice, and beef broth. Lift up your meat pieces to allow the broth to get underneath. Place the lid back on top and cook on low until meat shreds easily with a fork (about 9 hours). Shred, then place your meat back into the crock pot and cook on low for 1 more hour.
2. Split the hoagie buns in half. Add your shredded meat mixture and top with provolone cheese slices. Garnish with additional pepperoncini peppers, if you prefer.
Ladies, you can completely customize these zesty sammies to your family’s taste. Spice things up with extra peppers for added zing, or load up with additional veggies, or try inside a lettuce wrap to cut a few carbs – make this mouthwatering midweek meal your own!
