I am sooo stinkin’ excited to feature this post just in time to save you the  seemingly endless Pinterest research and effort of deciding what dessert to make this Easter!!
Introducing: The Pie Queen

Who is The Pie Queen of Bowling Green?
Brie Golliher and her husband own the Boyce General Store, a restaurant serving southern classics and her homemade pies!
They have two young boys: Brady (8) and Bryce (5) who they are raising in the country near their store.

One of my favorite things to do growing up during the holidays was to help my mother set the table; I would make name cards, fold napkins in fun ways and we were always thinking of new ways to surprise our guests. Easter is just around the corner and I was trying to think of a fun way to incorporate my mini pies into the table setting.

The nest pie is one of my most popular pies (it won the Duncan Hines festival best dessert 2015) It has a coconut macaroon crust and a fudge brownie filling.

CRUST ingredients
4 cups sweetened snowflake coconut
1/2 cup sugar
tossed together in a bowl
1/2 cup egg whites
1 tsp vanilla extract
mix together with your hands (it’s sticky but the best way!)
use 1/3 of the mixture to press into 6 greased mini tart pans
(my oldest son Brady helped press them in for me)
Prebake til brown in a 325 degree oven

FILLING ingredients

1 stick unsalted butter
1 cup chocolate chips
Melt together in microwave
1/2 cup of brown sugar
1/2 cup sugar
add to the melted chocolate
2 eggs
1 tsp vanilla
stie in til combined
scoop into the mini pans
then bake till beginning to set (10min)
then add the remaining crust to the edges and bake till the filling is puffed and the crust is browned.

Let the pies cool then start having fun!

I picked up some SUPER cute teal and gold placecard holders in the target dollar zone, I also found plastic eggs there that you can write on with markers.

My favorites are the cadbury mini eggs (because who doesn’t love them?!?!). I used the dark chocolate in one and the white chocolate in the others.

Then for some extra fun for the kids I did some with a cute peep on top!

If you don’t want to make the pies yourself they are available for order on our website burgerandpies.com, they can be shipped anywhere in the U.S.!
